Mango / Caramel / Juicy
Divinely delicate, this cup is all about fresh, clean, juicy tropical and floral flavours. Mango, peach, and lemon working in tandem with a honey/caramel vibe give off a strong iced tea impression, with added sweet florals in the background make this cup incredibly complex. It's mellow, expressive, and a downright joy to drink.
The Catuai cherries are mixed during harvest, floated for quality, and submerged underwater in a large tank for 10 days, then pulped using little water and set to dry on the family's elda for 10 days.
The presence of water slows down the fermentation and has kept this lot sparkly clean, exhibiting another side of the Hurtado-Gamba familys processing repetoire.
