This coffee is the washed process lot. The care and attention Frank gives his coffee is apparent right off the bat, and he uses his skills as a former chef to refine his processing. He supervises the picking of only ripe cherries, and then ensures that the cherries are carefully sorted before pulping. This is then where the fermentation process begins, leaving the cherries for 24hrs and carefully making sure the temperature never rises about 25 degrees celsius. From there, the coffee is de-pulped and left to ferment in an open tank for somewhere between 25-30 hours. When the pH reaches 4 and the brix meter reaches 9 degrees Brix, it’s washed. From there, the family is careful to make sure that the coffee is protected under shade as it dries.
